I love the lines of the strip built North Wind but would like just a tad shorter. Assuming without seeing the plans the forms are on 12" centers can i reduce that by 3/4" making the whole boat about 12" shorter without affecting anything? Height, width, etc. would all stay the same just it would drop to about 16' 2" from 17' 2" give or take an inch or so

You'll make the bow entry and stern exit a little less narrow. But the wood strips should handle it just fine while building.
