Gel coat can be used but applying will be the catch. If you have to means to prep the surface properly and spray on, it'll look nice.
But honestly, I think you'd be better off spending the $$ to get the clear LPU paint from System Three. Makes for a tough surface that can be touched up and it's easy to apply.
You can also use marine grade varnish (no Minwax) and that does a good job but not as tough as the S3 LPU paint.
Also, apply the graphite trick to the hull bottom and you'll have a durable craft that looks great. viewtopic.php?t=134
