DK Touring or Kayak T or something else ?

I have finished and junked a 11.5 piro first build, it just wasn't big enough, but it came out good.
I need something large enough for me and wife, about 350 lbs total wt.
I'm 6'4 she's 5'3 the catch is I gotta be able to pick it up and put it on the roof rack of a 4x4 expedition SUV,
and it's gotta be pretty stable or my wife isn't gonna want to ride in it. We have very little canoe experience, but I have a lot of wood working history.
I have downloaded the 18 DK touring, and it looks good, but possibly may be too much canoe for occasional weekend camping trips for lake and slow river use (not camping out of it, just taking it along to get out on the water) Or for loading and unloading myself
I also like the look of the kayak T a lot, any recommendations?
